Total Time: 20 minutes
Servings: 4 people
Ingredients
2 Roma Tomatoes, small dice
1 garlic clove, minced
½ tsp. sea salt
1/2 Jalapeno Pepper, minced and remove the seeds
2 Tbsp. Cilantro, chopped (about 1/3 a bunch with stems removed)
¼ red onion, small dice
2-3 cups watermelon, small dice
1/2 lime, juiced
Bag of tortilla chips
Directions
Prepare all of your ingredients and do the proper knife cuts. Small dice is ¼” all around. Chopped means that they should all be roughly the same size. Mince is very small cuts that are all roughly the same size. This helps create a flavor profile throughout the salsa without big chunks of stuff. You also eat with your eyes first!
Place all ingredients except the watermelon in a large serving bowl; gently mix to fully combine so you don’t squish the tomatoes.
Fold in the watermelon (in order not to squish watermelon) and serve in a bowl (or for fun…the watermelon!).
Serve with tortilla chips and enjoy!
